What are my options to improve my rank with a business that's "By Appointment Only"?

"My wife is a massage therapist and I've noticed a drop in her ranking on the map pack for "Massage in CITY" from being in the top 3 or 4 to number 10 in the past week. Interestingly, her business is back in the top 3 spots when I search late at night. During the day, she ranks below businesses with no websites and reviews under 4 stars.

I have considered updating her business hours, but she only works by appointment and isn’t at the location without one. Since she doesn’t have a receptionist, we don’t want people showing up randomly and risking negative reviews if no one is there to assist them. Her website, booking software, Google My Business profile, and even the sign on her door all clearly state that services are by appointment only.

I’m thinking of updating her main business listing image to include an overlay that says “By appointment only” to make it obvious if we decide to list operating hours. Is it worth listing the business hours, given the risk of negative reviews? What do you recommend?"
